prawn cakes



Sometimes it does feel like Spring. Even here.  And Alhamdulillah the breezy mornings are back!

I have a recipe to share with you today that makes me think very much of Spring: Prawn Cakes!

Ingredients:

a bunch of spring onions(!) sliced
a couple of cloves of garlic
some green chillies (if you like!)
1 tsp ground coriander
a little oil for sauteeing 
salt to taste
300g frozen or tinned sweetcorn
500g prawns (shelled if fresh or thawed if frozen, and de-veined)
1-1.5 cups breadcrumbs
lots of fresh coriander
1-2 eggs, beaten

Here's what you do:

Sautee the spring onions, garlic, chillies in a little oil.  Add the ground coriander and salt.  Let the onions become slightly translucent.


Add the sweetcorn and cook for a few minutes.


Then add the prawns.


Cook until they take on that coral-pink colour.


Let the mixture cool slightly and transfer to a bowl.  Then add the breadcrumbs, keeping some aside for coating the cakes.


Add the fresh, chopped coriander and combine well with a beaten egg or two (you need it to bind well).


Form in to patties, dip in a little beaten egg, coat with breadcumbs and shallow fry.
